The new Buchegger Extra Brut sparkling wine is a single-varietal Chardonnay sparkling wine made from grapes that were hand-harvested very early in the season. The first fermentation took place partly in stainless steel tanks and partly in used wooden barrels, from which the wine was bottled after being mixed with yeast and a tirage liqueur. Once again, the sparkling wine was allowed to rest, this time for as long as 30 months. To move the dead yeast from the bottom of the bottle to the neck, the bottles were gently swirled and rotated on the riddling rack every day. Finally, the bottles were disgorged and sealed with a natural cork. Fine perlage. It is a fruity, approachable sparkling wine with finesse\u2014full-bodied and delicate at the same time.
